Pork Tenderloin von Mike

 

 

Ingredients

 

1 ½ to 2 pounds of Pork Tenderloin

¼ cup of Brown Sugar

¼ cup of Orange Marmalade

¼ cup of Beef Stock

¼ cup of Red Wine

¼ cup of Chopped Dates

¼ cup of Dried Apricots

¼ cup of Raisins

 

1.      Heat oven to 350° Fahrenheit.

2.      Heat sugar and marmalade in a sauce pan, mixing well.

3.      Brush sugar and marmalade mixture over meat.

4.      Put tenderloin into a glass pan.

5.      Add the rest of the ingredients to the pan.

6.      Cover pan with foil and insert meat thermometer into tenderloin.

7.      Cook until thermometer registers 160 to 170° Fahrenheit (approx 35-40 minutes)

8.      Make sure and baste every 10 minutes.
