Rosie’s Cheese Cake

 

2/3 cup sugar

3 tablespoons cornstarch

1 large can crushed pineapple

 

Boil until thick and clear. Let it cool.

 

Crust

2/3 cup melted butter or margarine

2 eggs beaten

½ cup sugar

2 ½ cups flour

1 teaspoon baking powder

 

Mix well and press bottom and sides of 9 X 13 pan. I mix this with my hand.

 

Filling

 

4 eggs beaten

½ cup flour

1 lb. cream cheese

1 cup sugar

4 cups milk

¼ cup lemon juice

2 tsp. vanilla

 

Beat well and pour over pineapple filling.

Follow steps the way it is written. After the pineapple filling is cooled, put it over your crust and then pour the last filling over it. Sprinkle top with cinnamon.

 

 

Bake at 350˚ for 50 to 60 minutes.
