French Glace Blueberry Pie

 

1 quart blueberries

2/3 cup water

1 cup sugar

3 tbsp. cornstarch

1/3 cup water

¼ tsp. salt

1 baked 9” pie shell

whipped cream

 

Combine 1 cup berries & 2/3 cup water & boil 3 minutes

Blend sugar with cornstarch, 1/3 cup water & salt and add to boiling mixture.

Boil 1 minute, stirring constantly until thick.

Cool, add remaining berries & pour into baked pie shell.

Serve cooled with whipped cream
